Okin participates in BIND 4.0 Demo Day: Okin and Rebread revolutionizing the industry
On July 6th, Okin had the pleasure of participating in BIND 4.0 Demo Day, a prominent entrepreneurship platform. In this 7th edition, we had the honor of meeting Esteve Blank, recognized as the father of modern entrepreneurship. During the event, we witnessed impressive results from various projects related to the industry 4.0.
In addition, like the other partner companies and startups that attended the event, we gave a brief presentation alongside Angulas Aguinaga, highlighting our contribution with Rebread. During this exhibition, Goizane Lizarralde Atristain, Maddi Barandiaran Martínez, and Rebread co-founder Katarzyna Mlynarczyk were the protagonists and offered an exemplary explanation of our collaboration.
In this partnership, Okin will have the opportunity to design and develop a new food ingredient, MIKOKIN, with the support of Rebread, while Angulas Aguinaga will focus on developing a microprotein alternative for seafood. This collaboration with Rebread will allow us to offer innovative and sustainable products that promote upcycling and contribute to reducing food waste.
OUR COLLABORATION WITH REBREAD
Rebread is a company dedicated to the production and distribution of healthy and delicious baked goods. Their main goal is to offer fresh and nutritious bakery alternatives, using high-quality ingredients and innovative production techniques. Among their production techniques, they excel in creating refreshing beverages made from saved bread, as well as producing alcoholic beverages using natural ingredients that have a low carbon footprint.
Another important goal for Rebread is to prevent bread waste. Currently, approximately one-third of all global bread production is wasted each year. Aware of this issue, we have closely collaborated with Rebread to develop Mikokin, our new and innovative food ingredient. This ingredient is based on the application of microorganism fermentation technologies and different processing techniques. In particular, we will harness a filamentous fungus known as Koji to initiate the fermentation process.
At Okin, we have achieved a high level of circularity in our processes by reintroducing 40% of the waste generated in our production. Additionally, we allocate 10% of that waste to produce breadcrumbs, while the remaining 50% is used as livestock feed. Thanks to our collaboration with Rebread and the incorporation of our new ingredient, we will now be able to revalorize 50% of the generated waste, excluding those previously destined for livestock feed.
We are excited about the opportunities this collaboration offers and confident that Mikokin will be a success in terms of sustainability, diversification, and circular economy for Okin.
