WHAT IS PAILLASSE® BREAD?

Natural mother dough, selected wheat flours, long fermentation, stone sole... These are some of the characteristics that make this bread unique, recognizable and absolutely irresistible. Pan Paillasse ® is a traditional bread made with yeast and selected wheat flour that has an elongated and braided shape. One of the peculiarities of its manufacture is the long process of fermentation of the dough, after which the dough is divided and shaped manually to bake it. It is a cream-coloured crumbly bread with a crispy crust.

WHAT DOES PAILLASSE® BREAD BRING US? 

The mother dough bread is a very good nutritious food for the digestive system, the yeast and mother dough bacteria provide B vitamins and biotin. The citrates present in the bran are split thanks to the fermentation process and become much healthier compounds for the body.

If the bread is made with wholemeal flour, the soluble and insoluble fibre of the bran helps to control the absorption of fats and cholesterol and to reduce the speed at which sugars are absorbed.

After a meal the bran of the mother dough bread will maintain water in the intestine and help stimulate the stomach by shortening the transit time and reducing exposure of the walls of the intestine to toxins, some of which will be neutralized by the antioxidants in the bran and germ.
